# How To Make It:

01 - In a bowl, mix olive oil, BBQ sauce, smoked paprika, garlic powder, salt, and black pepper. Add chicken cubes and marinate for at least 15 minutes.
02 - Preheat grill or grill pan to medium-high. Thread chicken cubes onto skewers.
03 - Grill skewers for 10-12 minutes, turning occasionally and brushing with extra BBQ sauce, until cooked through and slightly charred.
04 - While the chicken cooks, arrange salad greens, peppers, tomatoes, onion, avocado, and cucumber in a large serving bowl.
05 - Whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper for the dressing.
06 - Place grilled chicken skewers on the salad. Drizzle with dressing and serve immediately.

# Expert Hints:

01 -
  • The warm charred chicken against the cool crisp vegetables is a textural dream.
  • You get that classic smoky BBQ taste but in a fresh guilt-free format.
02 -
  • Soak wooden skewers in water for 30 minutes before using them so they do not burn on the grill.
  • Let the chicken rest for a minute off the heat before slicing or serving to keep the juices inside.
03 -
  • Reserve a little bit of the fresh marinade before adding the raw chicken to use as a sauce base.
  • Do not overcrowd the grill or the chicken will steam instead of char.
