Cajun Spiced Grilled Corn (Printable)

Sweet grilled corn enhanced with smoky Cajun butter and fresh herbs for a vibrant, easy summer side.

# What You'll Need:

→ Vegetables

01 - 4 ears fresh corn on the cob, husked

→ Cajun Butter

02 - 4 tbsp unsalted butter, softened
03 - 1 tsp smoked paprika
04 - 1 tsp garlic powder
05 - 1/2 tsp onion powder
06 - 1/2 tsp dried oregano
07 - 1/2 tsp dried thyme
08 - 1/4 tsp cayenne pepper
09 - 1/2 tsp salt
10 - 1/4 tsp black pepper

→ Garnish

11 - 2 tbsp chopped fresh parsley
12 - 1 lime, cut into wedges

# How To Make It:

01 - Preheat your grill to medium-high heat (about 400°F/200°C).
02 - In a small bowl, mix together the softened butter, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, salt, and black pepper until well combined to make the Cajun butter.
03 - Brush each ear of corn generously with half of the Cajun butter mixture.
04 - Place corn directly on the grill grates. Grill, turning every 2–3 minutes, until the corn is nicely charred and tender, about 12–15 minutes total.
05 - Remove corn from the grill and immediately brush with the remaining Cajun butter.
06 - Sprinkle with chopped parsley and serve with lime wedges on the side.

# Expert Hints:

01 -
  • The smoky heat from the Cajun spices cuts through the natural sweetness of fresh corn in the most addictive way
  • It comes together in minutes but tastes like something from a specialty food stand
02 -
  • The butter needs to be truly soft, not just slightly warmed, or the spices will clump instead of incorporating evenly
  • Letting the corn rest for just a minute after brushing with the final butter helps everything absorb into the kernels
03 -
  • Peel back the husks without removing them completely, use them as handles while eating and for extra flavor while grilling
  • If using frozen corn, thaw completely and pat dry before grilling to prevent steaming instead of charring
