Tender halal brisket simmered with cabbage, potatoes, carrots in a seasoned broth for a festive meal.

# What You'll Need:

→ Meat and Brining

01 - 3.3 lbs halal beef brisket, trimmed of excess fat
02 - 8 cups water
03 - 2 tablespoons kosher salt
04 - 1 tablespoon black peppercorns
05 - 1 tablespoon coriander seeds
06 - 1 tablespoon mustard seeds
07 - 4 whole cloves
08 - 2 bay leaves
09 - 1 large onion, peeled and quartered
10 - 3 garlic cloves, peeled

→ Vegetables

11 - 1 small green cabbage (about 2 lbs), cut into 6 wedges
12 - 6 medium carrots, peeled and cut into 3-inch chunks
13 - 6 medium potatoes, peeled and quartered
14 - 3 celery stalks, cut into large pieces
15 - 1 parsnip, peeled and cut into large chunks (optional)

→ Seasoning

16 - 1 teaspoon ground allspice
17 - Freshly ground black pepper, to taste

# How To Make It:

01 - Place the halal beef brisket in a large stockpot. Pour in 8 cups of water. Add kosher salt, black peppercorns, coriander seeds, mustard seeds, whole cloves, bay leaves, quartered onion, garlic cloves, and ground allspice to the pot.
02 - Bring the pot to a boil over high heat. Reduce heat to a gentle simmer, cover with a lid, and cook for 2.5 hours. Skim any foam that rises to the surface during cooking.
03 - Add the quartered potatoes, carrot chunks, celery pieces, and parsnip if using. Continue simmering for 15 minutes, covered.
04 - Add the cabbage wedges to the pot. Simmer for an additional 20 to 25 minutes until the cabbage is tender and the meat is fork-tender.
05 - Remove the brisket carefully from the pot using tongs. Let it rest on a cutting board for 10 minutes. Slice against the grain into thin slices.
06 - Arrange the sliced beef and cooked vegetables on a serving platter. Ladle some of the cooking broth over the top. Season with freshly ground black pepper. Serve hot.

# Expert Hints:

01 -
  • The spice blend transforms ordinary brisket into something that feels slowcooked and cherished
  • Everything cooks in one pot, leaving you with almost zero cleanup
02 -
  • Resist the urge to rush that initial boil or the meat will turn tough
  • Letting the brisket rest before slicing is the difference between beautiful slices and a falling apart mess
03 -
  • Use the widest pot you own so the vegetables cook evenly
  • Spicy mustard or horseradish on the side lets everyone customize their bite
