01 - Whisk together olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, salt, black pepper, and chopped parsley in a large bowl until fully combined.
02 - Add shrimp to the marinade and toss thoroughly to coat. Cover bowl and refrigerate for 10–30 minutes to absorb flavors.
03 - Heat grill or grill pan to medium-high temperature. If using wooden skewers, soak in water for at least 15 minutes prior to threading.
04 - Thread marinated shrimp onto skewers, placing approximately 4–5 shrimp per skewer.
05 - Grill skewers for 2–3 minutes per side until shrimp turn opaque and develop light char marks.
06 - Remove from grill and transfer to serving platter. Garnish with lemon wedges and additional parsley if desired. Serve immediately.
