- Preheat oven to 350°F. Lightly grease a 9x13-inch baking pan with cooking spray or butter.
- Combine the cake mix, water, vegetable oil, and eggs in a large mixing bowl. Beat on medium speed with an electric mixer for 2 minutes until batter is completely smooth and free of lumps.
- Pour the batter into the prepared baking pan. Bake for 28-32 minutes, or until a wooden toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 15 minutes. Do not remove from the pan.
- Using the handle of a wooden spoon, poke holes evenly across the entire surface of the cake, spacing them approximately 1 inch apart.
- Dissolve the lime gelatin completely in 1 cup of boiling water in a medium bowl. Stir in 1/2 cup of cold water and mix well.
- Slowly pour the lime gelatin mixture over the surface of the cake, ensuring the liquid fills all the holes evenly.
- Refrigerate the cake for at least 2 hours to allow the gelatin to fully set and the cake to become thoroughly chilled.
- Spread the thawed whipped topping evenly over the entire surface of the chilled cake using a spatula.
- Sprinkle fresh lime zest over the topping. Add green sprinkles or arrange lime slices on top for decoration. Cut into squares and serve cold.
