19 - 1/2 cup sour cream
20 - 1/4 cup fresh cilantro, chopped
21 - 2 green onions, sliced
22 - 1 avocado, diced (optional)

# How To Make It:

01 - Preheat the oven to 425°F.
02 - Toss fries with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet in a single layer and bake for 25–30 minutes, flipping halfway, until golden and crispy.
03 - Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (about 5–6 minutes). Drain excess fat if needed.
04 - Add chopped onion and garlic; sauté for 2–3 minutes until softened.
05 - Stir in taco seasoning and water. Simmer 2–3 minutes until thickened. Season to taste with salt and pepper.
06 - When fries are done, transfer them to an ovenproof platter or skillet.
07 - Evenly sprinkle shredded cheeses over the fries and spoon the beef mixture on top. Drizzle with nacho cheese sauce if using.
08 - Return to the oven for 5 minutes, or until cheese is melted and bubbly.
09 - Remove from oven and top with tomatoes, black olives, jalapeños, avocado (if using), green onions, cilantro, and dollops of sour cream.
10 - Serve immediately while hot.

# Expert Hints:

01 -
  • The seasoned fries get impossibly crispy in the oven while staying fluffy inside, creating the perfect base for all those toppings
  • Everything comes together in under an hour and you can prep most ingredients while the fries bake
  • The combination of melty cheddar and Monterey Jack with that zesty beef mixture makes every bite addictive
02 -
  • Never skip flipping the fries halfway through baking or you will end up with soggy bottoms on one side and burnt edges on the other
  • Drain the excess fat from the beef before adding seasonings or the final dish will feel greasy rather than indulgent
  • Work quickly once the fries come out of the oven because they start losing their crunch the moment they hit room temperature
03 -
  • Space the fries out on the baking sheet with room between each one, overlapping slightly is fine but crowding will steam them into soggy disappointment
  • Let the beef mixture cool slightly before layering or it will make the cheese separate and the fries underneath lose their crunch
